Our Handmade Vodka is distilled 6 times from local Midwestern Corn then filter finished 12 times using four different materials to produce an exquisitely smooth and clean spirit.
4 oz. ginger beer
2 oz. Chicago Spirit Vodka
1 lime wedge
Stir ginger beer and vodka in a copper mule cup filled with crushed ice; squeeze lime wedge over top and drop into cup.
3 oz. Chicago Spirit Vodka
1/2 oz. olive juice
3 olives, skewered
Stir vodka and olive juice. Pour over a coupe. Garnish with olives.
We start with a light international style of gin, citrus forward and floral that is distilled 4 times. We then blend it with a London Dry gin aged with organic juniper and polish it nine times with three proprietary materials.
1/2 ounces sweet vermouth
1 1/2 ounces Campari
1 1/2 ounces Chicago Spirit Gin
Garnish: orange slice or twist
Pour the ingredients into an old-fashioned glass filled with ice cubes.
Garnish with an orange.

Jobu’s Silver Rum - is a blended light rum. The base is a classic light rum distilled from sugar cane molasses in the U.S. Virgin Islands blended with a French West Indies agricole then filter-finished with a six stage filteration for a smooth, fragrant light rum with grassy, herbal and savory overtones.
Jobu’s Barrel Aged Rum - is a light blended rum aged in charred American oak barrels for 2 - 5 years under tropical conditions. Woody, caramel, vanilla, coconut, cinnamon, and nutmeg. Our blended rum is produced in Trinidad, Barbados and Guyana and filter finished in the U.S. employing a six stage filtration employing three proprietary materials.
Fresh Lemon, Honey, Graham Cracker, Clove, and Almond on the finish with a beautifully balanced acidity.

Fresh squeeze of lemon and lime
Shake well with ice and strain into a martini glass.
Finish with a scoop of Lemon Sorbet and a splash of sparkling wine.
Orange zest, Coffee, Sage, and Tart Blueberries into Lavender with a sweet candied Lemon finish.
I have always appreciated the symphonic flavor bridge between blueberries and lavender. This varietal has exquisite depth and quality with a botanical kiss.

Crush 2 small thyme sprigs
2 parts CelloVia Blueberry Lavender Limoncello 1 part Chicago Spirit Gin
Serve with ice
Top with lemonade and garnish with blueberries

This varietal reminds me of being a kid in a candy store. Rich Italian and American Blood Oranges represent seasonal fruit at its finest here. The Fresh vanilla bean adds an elegant sweetness that balances the richness perfectly.

Sweet lime up front with toasted coconut flowing in on the mid palate. A beautifully rich finish with notes of butter and molasses and nice acidity from the lime circling back around.
What can I say, we put ‘da lime in ‘de coconut and mixed it all together…. This adds a tropical element to our overall spectrum of flavor as well as a warm and comforting reminder of summer fun during the cold winter months. The two flavors marry symphonically as they are superbly balanced. You may find yourself pleasantly surprised as the lime and coconut flow into each other and disappear somewhere between the beach and the palm tree.

Bright stewed red cherries up front with notes of cinnamon, ginger, lemongrass, and honey. Finishes with fresh lime peel and toasted brioche.
It’s very hard to derive bright cherry flavor from actual cherries…we were up to the task! We take 3 different seasonal cherries and macerate them in a Persian lime liqueur base to make this fun and delicious pairing. Pour this into any cocktail or mixer to create an endless array of your own signature drink recipes!

Our Private Label Program is ONLY available to Licensed Distributors and Retailers. It is not intended for direct consumer sales. We will only respond to inquiries from legally licensed entities.
Our private label program is unique in that it is designed on a micro platform to allow individual restaurants, bars and other establishments to create their own brand of spirit. Individual branding provides the establishment with the ability to create a unique experience for their customer, promotes customer loyalty and demonstrates an emphasis on quality and care to their patrons. Sounds expensive? It’s not.
Your company can design its own label… or our graphic designers will work with you to create your brand using your artwork, look and feel. Each label must have the appropriate legal content and must be approved by the TTB, the Federal agency responsible for distilled spirits.
We manage the submission process at no cost to you. The entire process can typically be completed in approximately 30–45 days.
We provide several packaging options to create a distinctive cost-effective look.
We private label Vodka, Gin, Rum, Mixed Cocktails, Liqueurs in variety of sizes and packaging options. From 200 ml, 375 ml, 750 ml, and 1 Liter bottles with screw caps or corks and shrink sleeves we can customize your look.
In most cases, we can provide our hand crafted premium spirits with your private label for about the same cost as what you would typically pay for “Well Spirits” without having to purchase in large quantities or make long term commitments.

Chris, the life force behind CelloVia, is an innovative mixologist with over 10 years’ experience and a total of over 14 years’ experience in the food and hospitality industry. After a family trip to the Amalfi Coast in Southern Italy, he brought back the fond memory of sharing a bottle of Limoncello with a restaurant owner on the Isle of Capri. He instantly fell in love with this style of handcrafted liqueur and the inspiration to produce CelloVia was born. Since then, he has created over 30 varietals privately, for bars and restaurants developing support and approval from all who have enjoyed.
Melissa, is the life force behind the life force….Chris’ beautiful and loving wife. Melissa is a classically trained Chef with a degree from the Culinary Institute of America in New York City. After learning her craft under the tutelage of master chefs in Michelin star restaurants along the east coast, she moved west to broaden her career and fell in love with Chicago. She has worked in the food industry for over 15 years and has been a chef for over 5 years. Her extraordinary palate, her creative inspirations and culinary skill provide expert consultation for every facet of the company.
Carey, serves in the capacity of mentor, Carey brings over twenty-five years of experience as a transactional attorney and business entrepreneur, and more than 30 years’ experience as Chris’ dad. His expertise combined with his love of Cello and family, have made this endeavor a delightful pursuit of happiness. He enjoys working in all facets of the business keeping the wheels rolling
Patti, the proud mama, contributes on many different levels and loves meeting new clients and stimulating sales. Her addition to the team makes it a true family endeavor.
Armando is our head graphic designer and is responsible for many of the beautiful custom labels we produce. He also contributes in outside sales.
Stewart is an outside sales manager with specific emphasis on sales to "off-premise" retailers.
Rene is our Production Assistant and Warehouse Manager. He literally keeps the "juices" flowing.
