Our Handmade Vodka is distilled 5 times from local Midwestern Corn then filter finished 12 times using four different materials to produce an exquisitely smooth and clean spirit.

Stir ginger beer and vodka in a copper mule cup filled with crushed ice; squeeze lime wedge over top and drop into cup.

We start with a light international style of gin, citrus forward and floral that is distilled 4 times. We then blend it with a London Dry gin aged with organic juniper and polish it nine times with three proprietary materials.

Pour the ingredients into an old-fashioned glass filled with ice cubes.

It is widely believed that the Negroni was created and named for Count Camillo Negroni in the 1920s. The story goes that the drink was invented when he ordered an Americano with gin at Cafe Casoni in Florence, Italy.
Column and pot still rums from the US Virgin Islands are blended with a French West Indies Agricole distilled from the 1st pressing of the sugar cane. Polished with a 6 stage filtration through 3 materials for rich clarity of flavor.

10 Fresh Mint Leaves
½ Lime cut into 4 wedges
2 Tsp Demerara Sugar
1 Cup Ice Cubes
1 ½ oz Chicago Spirit Rum
½ cup Club Soda
Directions
Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
Our Barrels
All of our Bourbon and Whiskey is aged in barrels made from American White Oak from Minnesota. Our barrels have a medium toast head, a #3 char, and cross-cut grooved staves for a faster extraction and accelerated maturation. It accelerates aging because more surface area is exposed and a significant amount of end grain is available for better wood sourced sugar extraction.
Our Bourbon
Our signature smooth spirit coupled with accelerated maturation produces a Bourbon that remarkably tastes much older than its age.
Our Whiskey
Chicago Spirit Whiskey is a blend of our Midwestern Corn Distillate and a subtle Wheat Distillate from Italy in a 75% Corn / 25% Wheat ratio. The result is a whiskey that is full-flavored and full bodied.

The Cow didn't do it!
For nearly 126 years, Mrs. Catherine O'Leary and her infamous cow were believed to have caused the Great Chicago Fire, which raged for two full days in 1871 and burned the city to the ground.
The fire began on a dry October night on the Near South Side in a barn where, not by coincidence, the current Chicago Fire Academy and training facility now stands.
Mrs. O'Leary was milking the cow and somehow, the legend goes, the cow knocked over a lantern and set the city ablaze.
The Chicago City Council on October 6, 1997 issued a formal proclamation officially absolving Mrs. O’Leary and her cow of any responsibility for starting the fire.
